Sault Restaurant, Daylesford

Sault Restaurant is one of the fine dining restaurants of the region, located just outside of Daylesford on a stunning 125 acre estate. About a 5 to 10 minute drive from Daylesford’s Vincent Street, the beautiful acreage of Sault Restaurant include the main restaurant, a barn used for wedding, impressively manicured gardens with their own lake and fields of lavender.

The restaurant is owned by Jodi Flockhart and Damien Aylward and they are supported by head chef Liam Scott.  Together they serve a seasonal contemporary Australian cuisine with a frequently changing menu based on what is on offer in the region.

Sault Restaurant in Daylesford is inspired by the french village of Sault near Avignon. Fields of lavender, a relaxed atmosphere and fantastic local food and wine became the inspiration for this fine dining restaurant.

Menu

The restaurant serves a choice of a 3 or 4 course choice from the a la carte menu at $105 and $125 per person respectively. This includes their stunning house baked ricotta whey sourdough with confit garlic butter.

Reservations are strictly required and as with many of the great restaurants in Daylesford, the reservation books fill up extremely quickly. Bookings can be made via their website here. Sault is open for dinner from Wednesdays to Saturday and for lunch from Friday to Sundays.

Weddings

Due to the stunning settings on 125 acre, Sault Restaurant is one of the most popular wedding venues around in the area. The Wedding Barn and Chapel are located directly next to the lake, making for beautiful views and even better wedding photos. The venue can host up to 100 seated and 120 people standing with varying packages available to suit different budgets.
